From Laura: One of my toddler's favorite quick lunches is squash quesadillas. I serve them to him in little squares with some black beans and fruit. My husband and I like them with a big dollop of salsa and guacamole.
Ingredients:
2 spoonfuls pureed winter squash
A handful of your favorite cheese (we like sharp cheddar)
Whole wheat tortilla
A sprinkle of cumin, chili powder, and oregano as desired (optional: hot sauce)
Directions:
Preheat a pan on the stove top at medium heat. Spread half of a tortilla with a large spoonful of pureed squash. Cover the squash with shredded cheese and spices, then fold the tortilla in half. Place in the pan and cook both sides until the cheese is melted and the tortilla is just starting to brown.
